Hawai’i is in the midst of a food crisis. Culinary Medicine presents part of the solution. With one 1 in 4 children facing food insecurity, Hawai’i ranks second in the country. At the same time, youth obesity in Hawai’i is over 15%. How can the islands have both skyrocketing rates of obesity and food insecurity. Doctors now see increasing advanced Metabolic syndrome -- a cluster of health issues characterized by abdominal obesity, high cholesterol, high blood pressure, and type 2 diabetes, with increased risk of multiple chronic health issues like cardiovascular disease, stroke and early death.
